The wild sloes are small berries-like plums, which become softer and rounder in taste only after being frozen.
The cold temperatures start an enzymatic process that breaks down the tannins and makes the fruit much sweeter.
They are very small and sometimes mealy. Paired with soft plum tones, they are an absolute highlight. A powerful discreet bitter almond note completes this aromatic spirit.
